Chicken meatballs with roasted carrots and avocado paste

Chicken meat can get a little boring, especially if it is a steady component of your menu. These mouth-watering chicken meatballs are a perfect way to bring some diversity to it. Add the crispy carrots and delicious avocado paste to it and you got yourself a wholesome, healthy and nutritious meal.

The ingredients you need:

For the meatballs:   

  • 700gr ground chicken
  • 1½ small zucchinis
  • ½ onion
  • 1 clove of garlic
  • Parmesan cheese
  • Salt and red pepper

For the carrots:

  • ½ kg or however much you decide to cook
  • Dill
  • Salt and black pepper
  • 50ml olive oil

For the avocado paste:

  • 1 avocado
  • 20ml olive oil
  • Lemon jiuce
  • Basil

How to prepare?

The Meatballs:

1. Shred the zucchini, salt them lightly and leave them aside for 5 minutes

2. Shred the onion

3. Mince the garlic clove and mix it with a little salt

4. Carefully squeeze the water out of the zucchini

5. Mix the zucchini, onion and garlic with the ground chicken meat

6. Add salt and red pepper to taste

7. Form the meat balls and fan bake in a preheated to 200°C (392°F) oven for 15 minutes

8. Sprinkle the parmesan cheese on top and bake for another 3-5 minutes

The carrots:

1. Clean the carrots and place them in the baking tray

2. Salt and pepper to taste

3. Rub them with the olive oil to make sure they are evenly coated

4. Fan bake them at 200°C (392°F) for 20 minutes

5. Sprinkle them with the minced dill

 

The avocado paste:

1. Pretty easy – just blend all the ingredients together

 

And Voilà! Your delicious dinner/lunch is done!

    Absolutely brilliant. Never thought of chicken meat balls before. I need to start cutting soon. Will have to try this. High protein low carb a bit of healthy fats with the avocado very well done.

    This looks like a simple, yet mouthwatering meal. My kids are getting bored with a few ways I use to cook chicken, and this would be a great variation. I’m sure they will love it!

    I’ve only tried chicken meatballs once and it was not successful. I think the texture takes some getting used to. But I enjoy cooking and am willing to try it again.
